RIP TO THE RESCUE

His name is RIP and he’s changing lives all over the country. I haven’t met Rip yet, but I know his mom and dad, Ann and Caldwell Esselstyn, M.D., author of PREVENT AND REVERSE HEART DISEASE.  Rip Esselstyn, a professional athlete, turned firefighter, introduced PLANT-STRONG eating to his buddies at Station 2 in Austin, Texas.  And so was born Rip’s first book, THE ENGINE 2 DIET, brim full of dramatic stories and luscious recipes.

Next came MY BEEF WITH MEAT, a powerhouse of a book that tackles every key health issue and provides the information and recipes readers need to achieve their best health.  Both books address the disastrous impact of the Standard American Diet on health and how to make dietary changes for restored health and vitality.

Rip Esselstyn’s books are indispensable additions to my kitchen library, both for their delicious recipes and their factual content about nutritional information and misinformation.  One of my copies was signed and addressed to me by Rip at a D.C. bookstore thanks to Plant-Based friend, Kathleen Baker.  THE ENGINE 2 DIET and MY BEEF WITH MEAT by Rip Esselstyn are both available online and at local bookstores.  You can also find copies in your local library. Here is a winning recipe idea from MY BEEF WITH MEAT:  Use a Yonana Ice Cream maker, blender or food processor to whip up a few frozen bananas to make a smooth creamy soft serve dessert.  For variation, add vanilla, cocoa powder, or any variety of frozen fruits to make your favorite flavors. No milk, no cream, no eggs, no added sugar, no problem. Enjoy immediately!
